Rustic inspirations
A visit to Italy 20 years ago, where their hostess cooked most of their food in an open fireplace, first inspired husband and wife Richard Schafer and Nancy Cooke to want a built-in, wood-burning oven in their next home. That experience and their surprisingly small degree of separation from an experienced brick mason combined to help them realize their dream.

The Nantucket Wine Festival is certainly about wine, but it is equally about the foods that pair with wine. Pi Pizza was there, with their organic dishes. Luminaries such as Todd English and Ian Just prepared dishes right before the eyes of eager visitors.

Pi Pizza
One of our favorite treats at each year's Nantucket Wine Festival is the delicious creations of Pi Pizza. We aren't alone - you can tell where the Pi Pizza oven is located by the lines that form there. Run by Evan Marley, Pi Pizza is about natural and fresh ingredients. While other pizza places use meat filled with nitrates, Evan avoids MSG, Nitrates, and other impurities. Even his wheat is organically grown.

Local Wineries at the Nantucket Wine Festival
The restaurant we watch for each year is Pi Pizza, run by Evan Marley. Evan is an enthusiastic proponent of healthy eating, and it shows in his foods. The lines by his pizza oven are always deep, but it's well worth the wait to get one of his delicious slices. I easily admit to returning a few times for his pizza slices, and spent quite a while talking with him about his pizza, his philosophies and his love for Nantucket.

Evan is a strong believer that "food should come from the ground or an animal and should not be manipulated". He feels, with all the junk food out there, that 'America is ready for quality pizza" and hopes that his shop is just the first step in spreading the word about healthy eating and pizza. His flour is organic and stone ground and he doesn't use nitrates. When you think about it, pizza is a blend of very healthy ingredients - fresh bread, fresh tomatoes, cheese, and maybe a few meat or veggie slices. As people took their plates and walked away, the compliments floated on the air - "This is the most fabulous pepperoni" - but most people simply took a bite and sighed in satisfaction.
